Beautiful in Red
| Nothing new to report for dinner tonight, we just had some leftovers. But I made Red Velvet Cupcakes tonight. I modified a recipe I found and man they smelled wonderful while they were baking. I made a Vanilla Cream Cheese Icing to top them with and while I am waiting for the cupcakes to cool, Ron had the icing on a strawberry and said it would make a great dip for strawberries. I purchased 'Nut & Party' cups from Michaels after drooling over at Chockylit's Cup Cake Bake Shop. Anyway, I thought I'd give these a try for a neater look to the cupcakes. I wish I had filled them with more batter so they would have puffed up. Actually, they did puff up a bit but fell after some jumping in the kitchen. Here's a couple of pictures for your droolmusement. I'm going to frost them in a minute and will post the recipe when I give you an update. Cups filled and ready for baking.

I think I might sneak a taste too! Isn't it required for proper recommendation? (cheshire cat grin) Update: Ok, these taste wonderful! The cake and icing were not too sweet and the cake was moist. Cocoa and vanilla lightly tease your tastebuds pleasing your mouth bite after bite. Here's the iced pictures:

so adorable!! Those little paper cups are so cute..I will have to pick some up. I drool over Chockylits cupcakes too! hehe

Hey Ali,
Those paper cups are great and something I will definitely use again. Plus, the cakes come out of them easily and you don't lose have the cake to the cup.
I just recently discovered Chockylit's site and love it all, the food, photography, and writing.
