Mahogany Broiled Chicken with Smoky Lime Sweet Potatoes and Cilantro Chimichurri

This post is a little late because of power outages we were having due to the wind storm that came through.

A while back I was watching a Food Network Chicken Challenge and thought several of the recipes looked good. Well I made the Mahogany Broiled Chicken with Smoky Lime Sweet Potatoes and Cilantro Chimichurri.

The chicken was fantastic and will definitely go into the keeper recipe file.

The potatoes were good but I think I would omit cumin for the sweet potatoes the next time I make them. I also think I added too much liquid to them and would like them a little less moist. Ron isn't a big fan of sweet potatoes, but he thought they were ok. I actually used yams to get the nice orange color.

The cilantro chimichurri really complimented the dish, but Ron is not a big cilantro fan so next time, I'll separate out the sauce and make his without cilantro.
