Crabcakes, Shrimp, Hot Cheesy Biscuits, and Roasted Asparagus
I tried two new recipes today. One from my to try pile - Hot Cheesy Biscuits, which I have had forever, handwritten on a piece of paper. I have no idea where I got the recipe from so I am unable to give credit. But they were very good with just the right amount of heat from the red pepper. The second recipe, Crabby Crabcakes, I found at Adventures Recipes. Wow! These crabcakes were absolutely delicious! They held together well when we pan-fried them in our cast-iron skillet. We tasted them without the lemon and they were really good. The crab taste really came through. But when we squeezed fresh lemon over them, they totally POPPED! This is definitely a keeper recipe! I did get 7 cakes out of the recipe, but they could have been made a little smaller to get a couple of more. The Popcorn Garlic Shrimp recipe was one I discovered a couple of years ago on the Atkins website. I tried the low-carb diet and felt terrible while I was on it. It just wasn't for me, even though it has worked for different people I know. But I did discover some great recipes from the Atkins Kitchens. And this has been in the "Tried and True Binder" since I first made it.
And we had roasted asparagus as our veggie because I still had a lot leftover. I buy one bunch and can easily get about 3 meals out of it. Though neither of us are complaining about having it twice this week.
RECIPE REQUEST: I would like to find a recipe using asparagus in an au gratin recipe. If you have a great one, please let me know. Thanks for the shrimp recipe. It looks like something I would like, and if I use it and put it on my blog I will credit you of course.
I was interested in your comments about Atkins. Other people have said similar things to me. Even though I'm a lower carb eater, I've never really been an Atkins fan and haven't tried that diet. But like you, I've found some of their recipes to be very tasty! On the South Beach Diet, I feel amazingly better than my old way of eating. I think the difference is the complex carbs that South Beach approves of combined with how energetic you feel when you aren't having those "white carb" highs and lows. Just thought I'd pass that on, for whatever it's worth.
