Ricotta Pancakes
| I finally made Ricotta Pancakes this morning. I saw this recipe on Everyday Italian with Giada De Laurentiis on Food Network. Initially I was going to make them a few weeks ago, but had trouble finding whole milk Ricotta cheese. This is definitely a keeper recipe. The pancakes were great. Instead of adding blueberries into the mix (because Ron doesn't like fruit in his pancakes), I placed them on the individual pancakes immediately after pouring them onto the griddle. This worked out well and I can easily see how it would work for multiple pancake personalities. Plus, this recipe makes 16 pancakes, but there is just two of us, so I refrigerated the rest of the pancake mix. And since I did not add fruit to the batter, I know it will be good tomorrow or Monday if I want pancakes again. The simple honey syrup was fabulous. Ron even liked it better than his favorite store-bought syrup.
