Fried Chicken and Mashed Potatoes

It was one of those nights where we really didn't know what to cook for dinner so on the way home I stopped at the local deli and picked up a batch of fried chicken and white potatoes for mashed potatoes. The store was out of Yukon Golds, so I decided I would try the Yellow potatoes and make mashed potatoes. After making the mashed potatoes, we decided that yellow potatoes aren't great for this type of recipe. They are really bland and even after seasoning, the potatoes just weren't great. I guess we've been spoiled with the Yukon golds. I hope to get back on track with making new recipes after my three-day weekend coming up. For some reason it has been really hard to plan meals this week. I guess the holidays were just too much food and we really haven't been all that interested in eating this week.
